I took a really good carrot cake recipe that I've made a couple of times before, and turned it into cupcakes for Easter at my parents house. A portable and perfectly portioned dessert! My mom - who requested the carrot cake to begin with - froze the left over cupcakes to dole out long after the holiday was over and she and my dad needed a little sweet treat!
